Meal chicken soup


Meal soup with Thai vegetables, chicken, basmati rice and lentils.

Directions

  1. Heat oil in a soup pot and fry the stir-fry mix for 2 minutes.
  2. Cut chicken fillet into cubes. Add chicken fillet, mix for chicken curry, chicken broth and water and bring to the boil while stirring.
  3. Add the rice and lentils (with moisture) and cook the soup over low heat for 15 minutes until the rice is tender.
  4. Pour half of the soup into a measuring cup or mix and puree with a hand blender.
  5. Return the pureed soup to the soup in the pan and bring to the boil again. Divide the soup over bowls.
