Meal salad with baby potatoes and smoked fish

Directions

Prepare the potatoes according to the directions of the bag in the microwave.

Let the potatoes evaporate and cool slightly.

In the meantime cut the tips of the haricots verts, halve the beans and cook them in a saucepan with plenty of boiling water and salt in 4-6 minutes until al dente.

Rinse them in a sieve under cold running water (then they stay nice and green) and let them drain well.

Halve the potatoes.

Cut the pepper into thin strips.

Cut the red onion finely.

Finely chop the oregano.

Stir in a bowl the mayonnaise with yoghurt, mustard, red onion and oregano to make a dressing.

Spoon the potatoes, haricots verts and peppers through the dressing.

Divide the arugula on plates and spoon the salad with the slices of smoked fish on it.

Menu suggestion for: half avocado stuffed with shrimps and mayonnaise.

After: grilled fresh pineapple with a blob of sour cream and some fresh mint.
