Directions

  1. Cut the (thawed) fish into smaller pieces or bars. Mix them with 2 tablespoons of olive oil, salt, pepper, half of the garlic and the thyme.
  2. Heat 1 tablespoon of olive oil in a soup pot and fry the fennel, carrot and shallots for 2 minutes.
  3. Spoon the tomato puree and fry for 1 minute. Pour in the stock and simmer for 5 minutes. Add the fish and simmer for 8 minutes.
  4. Mix the rest of the olive oil with the rest of the garlic. Brush the bread slices with this mixture and grill them briefly under a hot oven grill. Serve them with the soup.
