Mediterranean meatloaf


Minced meat from the oven with olives, Italian herbs, onion and tomatoes.

Directions

  1. Preheat the oven to 175 ºC.
  2. Crumble the bread in the food processor and mix it with the eggs and tapenade through the mince.
  3. Cut the olives into slices. Mix the herbs, olives, pepper and salt with the minced meat. Press the garlic above it.
  4. Line a baking tray with parchment paper and place the mince on it. Form a "loaf" of the minced meat.
  5. Put the baking sheet in the middle of the oven and bake the meatloaf in about 1 hour brown and done. Dip away the grease in between with kitchen paper.
  6. Meanwhile, cut the onion.
  7. Heat the oil in a pan and gently fry the onion for 2-3 minutes. Mix in tomato sauce and the tapenade. Cook the sauce for 2 more minutes.
  8. Remove the meatloaf from the oven, let it rest and cut into slices.
  9. Divide the slices over the plates and pour the tomato sauce over it.
