Preheat the oven to 200 ºC.
Line the quiche mold with the dough, let the slices overlap.
Heat the oil in a frying pan. Add the spinach in 4 portions and let the vegetables begin to shrink and the moisture evaporate completely.
Divide the spinach with the goat's cheese over the dough base.
Mix the eggs with the crème fraîche, oregano, pepper and salt. Pour the egg-cream mixture over the spinach. Sprinkle the cake with the almond shavings.
Fry the spinach quiche in the oven for about 35 minutes until golden brown and done.
