Mediterranean stew with smoked sausage


Stew of potatoes, smoked sausage, onions, garlic, zucchini, peppers and passata with smoked sausage

Directions

  1. Brush the potatoes well under the tap and cut the large ones in half.
  2. Bring to the boil in a bottom water and possibly a teaspoon of salt. Cook them over medium heat for 20 minutes until done.
  3. In the meantime, heat the smoked sausage according to the instructions on the packaging.
  4. Meanwhile, cut the onions and finely chop the garlic. Cut the courgettes and the sweet pepper into cubes of 1 cm.
  5. Fry the onion and garlic 3 minutes in the oil in a frying pan. Add the zucchini and peppers. Bake 3 minutes and add pasta sauce.
  6. Bring everything to the boil and simmer for 5 minutes on low heat.
  7. Drain the potatoes and stamp them in the peel with the oil to a coarse puree. Stir in the vegetables and season with pepper and salt.
  8. Cut the sausage into slices and serve with the stew.
