Directions

  1. Baste the vegetables over and over with skewers.
  2. Stir in the parsley, garlic, lemon zest and juice through the oil and brush the skewers.
  3. Season with salt and pepper.
  4. Roast the skewers for about 10 minutes in a grill pan on medium height or on the barbecue.
  5. Tasty with salsa verde.
