Melon tomato soup with raw ham and basil

Cut the melon in half and remove the seeds and the skin.

Cut the flesh into pieces and put them in the blender with the olive oil, the lemon juice and 0.75 of the basil.

Puree and season with salt and pepper, add some water if necessary.

Remove the moisture and the seeds from the tomatoes and cut the flesh with skin into small pieces.

Cut the ham into strips.

Divide the soup over deep plates, spoon a spoonful of tomato cubes in each plate and finish with the strips of ham and a leaf of basil.
