Melon with stilton and orange dressing
A tasty recipe. The starter contains the following ingredients: orange (polished), white balsamic vinegar, extra virgin olive oil, galia melon (chilled), Stilton (or Danablu (cheese)) and watercress.

Grate the orange zest of the orange. In a container, beat the balsamic vinegar and oil into a dressing. Stir in the grated orange peel and season the dressing with salt and pepper. Allow the flavors to migrate for at least 15 minutes.

Cut the melon into 4 parts. Scoop out the seeds and cut the flesh from the skin. Cut the parts into very thin slices.

Spread the slices of melon on 4 plates. Crumble the cheese or cut it into very small cubes. Sprinkle the cheese over the melon.

Place a tuft of watercress on each plate. Drip the dressing over the melon and serve immediately.
