Meringue with amaretto and apple

Peel the apples and cut into 2 cm cubes.

Bring the apple juice to half of the amaretto and 1/3 of the sugar in a pan (not aluminum!).

Add the apple cubes and poach them against the boil in 4-6 minutes until tender.

Spoon the cubes with a slotted spoon and let them cool down.

Boil the moisture until it becomes slightly syrupy, let the syrup cool down too.

Roast the almonds golden brown in a dry frying pan and spoon a spoonful of sugar at the end.

Spoon the almonds on a plate and let them cool.

In a bowl, beat the cream and stir in 3 tablespoons of sugar, the mascarpone and the remaining amaretto.

Put the meringues on plates and scoop up the mascarpone mixture with peaks.

Divide the apple cubes over it and drop some of the apple syrup.

Sprinkle the almonds over it.
