Mexican meal soup with quesadillas
Fast Mexican meal soup with leek, beans and vegetables. Served with quesedillas with mature cheese.

Stir the seasoning mix with the water. Clean the leek, cut into rings and wax. Drain the beans. Heat the oil in a frying pan. Fry the leeks and the stir-fry vegetables for about 3 minutes. Add the seasoning mix and heat for approx. 1 min.

Pour in the tomato soup and bring to the boil. Let the soup boil for about 6 minutes. Heat the beans for the last 2 minutes. Meanwhile, sprinkle the tortillas with cheese and double fold.

Heat the tortillas per 2 in a microwave on the highest setting (700 watts). Season the soup with pepper and salt. Serve with the quesedillas.
