Mexican one-pan dish with quinoa


One-pan dish with paprika, corn grains. kidney beans, tomato, quinoa, taco herbs and cheddar.

Directions

  1. Put the corn and beans in a colander, rinse under cold running water and drain.
  2. In the meantime, halve the peppers, remove the stalk and seed lists and cut the flesh into cubes.
  3. Put all the vegetables, the quinoa and herbs in a large 30 cm pan, pour the water over it and bring to the boil.
  4. Leave to simmer for approx. 20 min. Without lid on the pan. Scoop occasionally.
  5. Meanwhile, grate the cheddar and mix through the dish. Cut the coriander fine and the lime into wedges. Serve with it.
