Mihoensalade with pineapple and paprika
A tasty recipe. The side dish contains the following ingredients: fish, noodles, red peppers (sweet), cucumber, pineapple pieces ((cool) fresh), lemon (the juice), Thai fish sauce, sugar, red pepper (finely chopped), red onion (chopped) and cashew nuts (coarsely chopped).

Break the noodles into pieces and soak the noodles according to the instructions in boiling water.

Meanwhile, halve the peppers, remove the seeds and cut the flesh into thin strips.

Peel the cucumber and cut the flesh into cubes.

Cut the pineapple pieces finer.

In a salad bowl, mix the lemon juice with the fish sauce, sugar, red pepper and onion.

Transfer the noodles to a colander and rinse them with cold water.

Mix the noodles with the cubes of paprika, cucumber and pineapple through the dressing.

Keep the salad possibly covered in the refrigerator, so that the flavors can easily withdraw.

Sprinkle the cashew nuts just before serving..
