Preheat the oven grill to the highest setting. Heat the oil in a frying pan and fry the cutlets in 6 min. Until golden brown and done. Turn halfway.

In the meantime, cut the bread rolls open and spread the tomato salad over the lower halves.

Cut the cutlets into strips and spread over the rolls. Sprinkle with the cheese and place under the oven grill for 3-5 minutes until the cheese has melted.

Divide the arugula over the cheese and cover the sandwiches with the upper halves. Serve immediately.
