Beat the eggs in a bowl.

Add pepper, salt and Provençal herbs to taste and stir in the ham and the potato cubes.

Melt 1 knob of butter in a large frying pan.

Fry the pepper cubes briefly.

Add the second knob of butter and let it melt.

Then add the egg mixture.
-
Sprinkle the omelette with the grated cheese and put a (splash) lid on the pan.

Turn the gas half-high and let the omelette rise in 6 minutes and become airy.

The omelet is ready when the top has dried due to the heat in the pan.

Little eaters have enough omelette with some lettuce and bread.

Big eaters can opt for boiled potatoes and spinach.
