Mimosa eggs
A tasty Dutch recipe. The brunch contains the following ingredients: eggs (hard-boiled and cooled), (freshly ground) white pepper, chives (chopped), parsley (finely chopped) and cream cheese.

Cut the eggs in half lengthwise, put the egg yolks in a bowl and fine them.

Season with (freshly ground) white pepper and salt.

Stir in the other chives the chives and parsley through the cream cheese and season with (freshly ground) white pepper and salt.

Spoon the herb cream cheese into the protein halves.

Sprinkle with the egg yolk crumbs: they look like the flowers of the mimosa.

Serve the eggs with toasted bread and a salad of cucumber and spring onions..
