Beat the egg whites well with salt and pepper and a few tablespoons of water, until a firm mixture.

Crumble the cheese and spat it together with the chives through the egg whites.

Heat the oil in a large frying pan with non-stick coating and pour in the egg mixture.

Leave the omelette on low heat on a flame distributor with the lid on the pan in about 5 minutes.

Turn the omelette over with a flat lid or plate and bake the other side for another 2 minutes.
