Solid Italian meal vegetable soup with bacon and chicken broth.

Chop the onion and cut the bacon into cubes.

Heat the butter in a soup pan or frying pan with a thick bottom. Fry the bacon for 5 minutes on low heat. Add the onion and cook for 10 minutes.

Peel the potatoes and winter carrot. Cut the carrot, zucchini and potato into cubes (brunoise).

Add the carrot and zucchini to the bacon onions mixture and bake for another 2 minutes.

Add the potato, peas and rice with the water and bouillon tablet. Bring to a boil and cook over low heat with the lid on the pan for 35 minutes.

Stir in the soup and check that the vegetables and rice are tender. Otherwise, cook for 10 minutes. Drain the beans.

Spoon the spinach and beans through the soup and cook for another 2 minutes until the spinach has shrunk and the beans are warm. Season with pepper and salt.

Serve the soup in plates or bowls and sprinkle with some olive oil. Yummy! .
