Mini-lemon menu with lemon and peach

Mix the mascarpone with the lemon curd. Place 2 cantuccini on the bottom of each glass.

Let the peaches drain, collect the syrup. Put the peaches in a tall cup and puree with the hand blender. Drizzle the cantuccini with 50 ml of syrup.

Spoon the peach puree on the cantuccini and spread the mascarpone over it. Cover and put in the fridge for at least 1 hour.

Divide the raspberries over the glasses and sprinkle with icing sugar. Yummy! .
