Mini peppers stuffed with couscous
A tasty recipe. The vegetarian side dish contains the following ingredients: couscous, mini peppers, lemon juice, extra virgin olive oil, paprika powder, spring onions (in rings), white cheese cubes and fresh mint (in thin strips).
In bowl couscous with 125 ml of boiling water and salt for about 6 minutes.
Halve peppers and remove seeds.
Halves in pan with plenty of boiling water and salt in approx.
5-7 minutes until cooked and let drain in a sieve.
In a small bowl, add lemon juice, oil, paprika, salt and pepper to dressing.
Remove couscous with fork and onion rings, cheese cubes, fresh mint and dressing.
Season peppers generously with couscous and to scale..
