Mini tortillas with tomato
A tasty recipe. The snack contains the following ingredients: tortilla wraps (diameter 25 cm), lemon (scrubbed), Tasty Tom tomatoes, mozzarella, dried tomato tapenade, ground cumin (djinten) and fresh coriander (finely chopped).

Stick 6 rounds from each tortilla with the cookie cutter.

Grate the yellow skin of the lemon and halve the fruit. Halve the tomatoes, scoop out the seeds and dab the tomatoes dry. Cut the tomatoes and mozzarella into small pieces. Mix in a bowl the pieces of tomato with the mozzarella, tomato tapenade, grated lemon zest and cumin.

Divide the vegetable mixture over the mini tortillas. Fold them half double and put them in a row against the edge on the baking tin. Put half the lemons against the rows of tortillas so that they remain half-folded.

Preheat the oven to 200 ° C. Put the baking tin in the middle of the oven and bake the mini tortillas for about 10 minutes. Drop some lemon juice and sprinkle the coriander over it. Serve them immediately.
