A tasty recipe. The main course contains the following ingredients: meat, stoned plums (500 g), sesame seeds (100 g dish), olive oil, onions (in rings), cane sugar, ground cinnamon, beef ribs (in pieces), ground cumin (djinten), cardamom, ginger powder (djahé), chilli pepper, clove, paprika powder mild, saffron (a 0.05 g), cinnamon stick, coriander ((15 g) and for garnish).

Directions

  1. Put the prunes in a pan and pour a layer of water. Cook the prunes for 10 minutes on low heat. Roast the sesame seeds in a frying pan without butter or oil for 3 minutes. Heat 3 tbsp oil in a frying pan and fry the onions, sugar and cinnamon on low heat for 20 min. Scoop frequently. Season with salt and pepper. Drain the prunes and add to the onion mixture. Fry for another 2 minutes and sprinkle with the sesame seeds.
  2. Mix the meat with the cumin, cardamom, ginger powder, chili pepper, cloves and the paprika powder. Heat a large stew pan and fry the meat for 10 minutes. Change regularly. Crumble the threads of saffron between your fingers and add the cinnamon stick together with 300 ml of water. Leave the meat on low heat with the lid tilted on the pan in approx. 4 hours until tender and soft.
  3. Remove the cinnamon stick. Season with salt and pepper and garnish with the coriander. Serve with the plums and for example couscous.
