Moroccan vegetable salad
A nice Moroccan recipe. The vegetarian side dish contains the following ingredients: olive oil, onion (chopped), garlic (finely chopped), red pepper (in pieces), zucchini (in half slices), eggplant (diced), ground cumin (djinten), lemon (pressed) and fresh coriander (finely chopped).

Heat oil in frying pan and fry onion and garlic for 3 minutes.

Pepper, zucchini and aubergine create and 1 min.

Add cumin and 100 ml of water.

Bring everything to the boil and gently simmer vegetables for about 15 minutes.

Spoil occasionally.

Season with lemon juice, pepper and salt to taste.

Let vegetables cool down and sprinkle with coriander if necessary.

Serve salad at room temperature.
