Mushroom curry with celeriac

Heat the oil in a large casserole, add the onion and celeriac and fruit for about 4 minutes. Add the curry paste and fruit for 1 minute while stirring.

Add the mushrooms and stir fry for a few minutes at medium height until the mushrooms start to shrink slightly. Stir in the tomatoes and bring to the boil.

Leave to stew for about 20 minutes at a low setting. Meanwhile, cook the rice. Stir in the curry and bring to taste with salt and pepper.

Serve in bowls with rice and yogurt. Sprinkle with the coriander.
