Mussel salad with lemon mayonnaise

Squeeze out the lemon. Roast the bread. Mix half of the lemon juice in the mayonnaise and season with salt and pepper.

Cut the avocado half in half. Remove the kernel and scoop out the flesh with a spoon from the peel. Cut the flesh into cubes.

Drizzle the avocado with 1 tsp lemon juice. Divide the lettuce over plates and drizzle with the rest of the lemon juice and the oil.

Divide the avocado and mussels over the lettuce. Spoon the mayonnaise onto the mussel salad.

Garnish with the chives. Cut the bread diagonally and serve with the salad.
