Summer stew with raw endive, egg and vegetarian smoked sausage.

Directions

  1. Boil the potatoes for about 20 minutes. Cut the endive into strips, wash and drain in a colander.
  2. Boil the egg in 8 min., Rinse under cold water and peel. Heat the smoked sausage according to the instructions on the packaging.
  3. Heat the milk in a saucepan with the butter. Drain the potatoes, crush and stir in the milk mixture until a smooth puree is formed.
  4. Put the endive through it. Season with salt and pepper. Cut the smoked sausage and the egg into slices.
  5. Put the stew in a bowl, place the slices of smoked sausage and egg on top of it. Garnish with the chives.
