Niçoise with baby potatoes and tuna


French salad with green beans, tomato, egg and tuna.

Directions

  1. Halve the potatoes lengthwise and boil them in water with salt, if necessary, for 15 minutes. Add the green beans for the last 5 minutes.
  2. Meanwhile, press out the orange. Mix the juice with the mustard and oil into a dressing.
  3. Season with pepper and salt. Cut the onion into wafer-thin half rings.
  4. Mix through the dressing. Drain the potatoes and green beans, drain well and mix warmly with the dressing. Allow to cool to lukewarm.
  5. Meanwhile, boil the eggs hard in 8 minutes. Scary under cold running water, peel and cut into pieces.
  6. Remove any unsightly leaves from the lettuce. Cut the tomatoes into pieces. Divide the rest of the salad leaves over a flat dish.
  7. Scoop the baby potatoes and green beans mixture on top and divide the eggs, tomatoes, tuna and olives.
