Noodle salad with king prawns, red pepper, garlic, mando, lime, mint peppers, coriander and peanuts.

Directions

  1. Dab the shrimps dry with kitchen paper. Remove the seeds from the red pepper and cut into pieces. Press the garlic over a bowl. Mix the pepper and garlic with oil and the fish sauce.
  2. Puree with the hand blender and pour over the shrimp. Leave to marinate in the refrigerator for at least 1 hour.
  3. Heat a stirring stir-fry the prawns with marinade in approx. 5 min. Pink and done. Cool slightly and peel the shrimp.
  4. Cook the noodles according to the instructions on the package. Rinse under cold running water. Cut the flesh of the mango into strips.
  5. Grate the green skin of the lime and squeeze out the fruit. Beat a dressing of the lime zest, the juice, the sesame oil and the rest of the fish sauce.
  6. Cut the pepper into strips. Mix the noodles with the prawns, mango, peppers and coriander and pour the dressing through them. Spread over 4 bowls and sprinkle with the peanuts. Tasty with cucumber.
