Noodle salad with coconut peanut dressing


A tasty recipe. The vegetarian side dish contains the following ingredients: coconut milk, peanut butter (with pieces), Thai green curry paste, wok noodles, spring onions (in strips), carrot julienne (or grated carrot), lemon (squeezed), peanuts (unsalted and coarsely chopped).

Directions

  1. Boil coconut milk with peanut butter and curry paste and cook very gently for 5 minutes.
  2. Give coconut dressing in bowl and allow to cool.
  3. Boil noodles according to instructions and let drain in colander.
  4. Warm noodles by dressing and let cool.
  5. Boil onion and carrot jelly with noodles.
  6. Season the salad with lemon juice, salt and pepper and sprinkle with peanuts.
  7. Nice with all kinds of oriental dishes..
