Directions

  1. Heat the coconut milk, peanut butter and curry paste. Stir well and cook gently for about 3 minutes. Pour the dressing into a bowl and allow to cool.
  2. Boil the noodles according to the instructions on the packaging, pour them off and scoop them warm through the dressing. Allow to cool.
  3. Spoon the carrot, lemon juice and chives lightly. Sprinkle the salad with the peanuts.
