Cut the garlic finely and chop the onion. Heat the oil in a frying pan. On low heat, fry the onion and garlic for 5 minutes. Add the tomatoes and bring to the boil.

Tie the herbs together with kitchen rope and add. Cook gently for 25 minutes on low heat. Stir regularly with a wooden spoon and press the tomato piece.

Take out the herbs. Season with the sugar and pepper and salt.
