Noodles with broccoli and cashew nuts


Oriental noodles with broccoli, mushrooms and cashew nuts suitable for vegans.

Directions

  1. Toast the cashew nuts in a dry frying pan, stirring until golden brown. Clean the mushrooms with kitchen paper.
  2. Cut the stalk of the red pepper. Halve the pepper in the length and remove the seed lists with a sharp knife. Cut the pepper into strips.
  3. Divide the broccoli into small florets. Boil the broccoli and noodles in large pan with boiling water in 4 minutes until al dente and pour.
  4. In the meantime, heat the wok oil in a frying pan and stir-fry the mushrooms with the red pepper for approx. 3 min.
  5. Cut the fresh mint fine. Mix the noodles, broccoli, mushrooms and soy sauce and spread over the bowls. Sprinkle with the cashew nuts and the mint.
