Egg noodle with fried chicken, mint and mango.

Directions

  1. Put the noodles in a bowl, pour boiling water until they are under and leave for 10 minutes. Drain and rinse with cold running water.
  2. Meanwhile, halve the peppers, remove the stem and seeds and cut the flesh into thin strips.
  3. Peel the mango, cut the pulp from the pit and cut into strips. Cut the fresh mint into thin strips.
  4. Heat the chicken in a stirring stir fry the chicken in 2 min. Brown.
  5. Add the bell pepper and stir-fry 2 minutes. Add the noodles, chili sauce and fish sauce and stir-fry for another 1 minute. Season with pepper.
  6. Take the wok from the heat and spoon in the mango and 2/3 of the fresh mint. Garnish with the rest of the fresh mint and serve immediately.
