Nut rice salad with apple, chorizo and mushrooms
Meal salad with nut rice, rocket, chorizo, apple, chestnut mushrooms and red pepper.

Boil the rice according to the instructions on the package. Drain and let cool.

Meanwhile cut the chorizo into cubes of 1 cm. Wipe the mushrooms clean and cut into quarters.

Heat a pan without oil or butter and fry the chorizo with the mushrooms for 6 minutes on medium heat. Change regularly.

In the meantime, cut the unpeeled apples into quarters, remove the cores and cut the flesh into pieces. Add to the chorizo and cook for 2 minutes.

Squeeze out the lime. Remove the stalk of the red pepper, halve the pepper lengthwise and remove the seed lists with a sharp knife.

Cut the flesh as finely as possible. Mix with 2 tbsp lime juice, the rosemary and oil.

Mix the rice and the chorizo mixture in a bowl. Put the arugula through and sprinkle with the dressing. Yummy! .
