Directions

  1. Boil the rice in a pan of water for about 8 minutes.
  2. Squeeze out lime and finely chop garlic. Clean red pepper and finely chop.
  3. Peel and cut mango into cubes. Divide watercress into small pieces.
  4. Spoon in a wok oil, lime juice, garlic, red pepper and mango. Drain rice and scoop through it. Bake the whole for about 2 minutes. Put watercress through.
  5. Serve with fish or poultry dishes.
