Directions

  1. Keep 1 tbsp flour separately. For the basic batter, put the rest of the flour in a mixing bowl and pour in the yeast, sugar, cinnamon and salt.
  2. Beat the egg. Make a well in the middle of the flour and pour in the beaten egg.
  3. Pour the milk with a wooden spoon while stirring with a mixer. Keep stirring or tapping until a smooth batter is created.
  4. Grate the yellow skin of the lemon for the filling and squeeze out the fruit. Cut the apple into cubes and the glazed peel into pieces.
  5. Drizzle the apple cubes in a bowl with lemon juice and shake them with the lemon zest, the raisins, the currants, the glazed peel and the flour.
  6. Stir through the batter, cover the bowl with cling film and allow the batter to rise for 1 hour at a warm draft-free place, until the volume has doubled.
  7. Heat the oil in the fryer to 180 ° C. Dip the ice cream roll into the hot oil and scoop out the scooped batter.
  8. Deep fry 4 to 5 oliebollen at the same time in about 5 minutes until golden brown and done. Turn halfway, if they do not automatically.
