Omelette with surimi and cucumber

Beat the eggs with 3 tablespoons of water, salt and freshly ground pepper. Put in the surimi, garlic, red pepper, shallots and 1 tablespoon of coriander.

Bake this mixture in hot oil on a low setting an omelette. Invert the omelet if the underside is light brown and the top is not yet tender. Put a lid on the pan and let it cook gently.

Serve the omelette in long strips and garnish with the cucumber and the rest of the coriander.
