One-pan dish with lentils, zucchini, tomato and potatoes


Lambs with zucchini, harissa, ras al hanout, lentils, tastom-tomatoes, apricots and parsley.

Directions

  1. Heat the oil in a thick-bottomed pan and fry the potatoes for 10 minutes. Cut the zucchini into cubes of 1 cm (brunoise).
  2. Add with the harissa and ras el hanout to the potatoes and cook for 5 minutes.
  3. Let the lentils drain in the meantime. Cut the tomatoes into wedges and the apricots into pieces.
  4. Add the lentils, tomatoes and apricots to the bantam-zucchini mixture and simmer for 5 minutes on low heat. Season with pepper and salt.
  5. In the meantime, finely chop the parsley and sprinkle over the dish.
