Onion soup with Christmas croutons

Heat the butter in a soup pot with a thick bottom.

Add the onions, thyme and bay leaves. Fry the onions in a glassy and soft low on about 30 minutes.

Stir in the flour, add the white wine and stir well.

Add the vegetable stock, bring to a boil and let the soup simmer for about 20 minutes.

Heat the oven grill.

Cut or cut Christmas shapes (eg Christmas bellies) from the bread.

Sprinkle with the cheese and place under the hot grill for 2-3 minutes.

Sprinkle the soup with the parsley and put the croutons on it.
