Heat the butter but do not let it discolour.

Put the onion through and leave with the lid on the pan at half position for 15 minutes.

Scoop the sugar through. Add the wine, let it evaporate slightly and let the onions turn golden brown.

Pour in the stock, add the thyme and cook gently with the lid for 15 minutes. Add salt and pepper to taste.

Heat the oven grill. Roast the baguette slices lightly brown.

Divide the soup over the bowls. Place the bread slices on the soup.

Sprinkle bread and soup with the cheese. Put the soup under the grill until the cheese has melted.
