Peel the forest pens with a peeler.

Place the forest pens one by one on a plank and scrape them into long ribbons with the peeler.

Cut the peppers open lengthwise and pat dry with kitchen paper.

Cut the peppers into long strips of one cm thick.

Cut the bread into eight thick slices.
-
Mix the mayonnaise with the tapenade in a small bowl.
-
Brush the slices of bread generously with the tomato mayonnaise.

Divide the arugula over half of the sliced bread.
-
Place the carrots ribbons and the pepper bars loosely and curled up.
-
Fold the slices of salami loosely double and lay them on the slices of vegetables.
-
Sprinkle the capers over the salami and put the other slices of bread down with the mayonnaise side down.

Press the sandwiches slightly and cut them with a bread knife.

Put the sandwiches on plates.
