Directions

  1. Peel and cut the onions into thin rings or finely chop them.
  2. Heat the oil in a large pan with heavy soil and fry the onions with a pinch of salt while stirring for 5 to 10 minutes until golden brown.
  3. Add the rest of the ingredients and leave to simmer for an hour with the lid on the pan at low setting.
  4. Remove the lid from the pan and let the water gently simmer for another 15 minutes or as long as necessary until the onion spread is sticky and nicely browned.
