Peel and cut the onions into thin rings or finely chop them.

Heat the oil in a large pan with heavy soil and fry the onions with a pinch of salt while stirring for 5 to 10 minutes until golden brown.

Add the rest of the ingredients and leave to simmer for an hour with the lid on the pan at low setting.
-
Remove the lid from the pan and let the water gently simmer for another 15 minutes or as long as necessary until the onion spread is sticky and nicely browned.
