Directions

  1. Grate half of the zest of the orange and lime as finely as possible and squeeze out the fruits.
  2. Bring water to a boil in a large pan, turn the heat down and hang a smaller pan or bowl with a capacity of at least 1 liter.
  3. The bottom of the pan / bowl must not touch that of the pan with water.
  4. Mix the eggs with the sugar and citrus zest for 2 minutes until the whole has a lighter color.
