Zucchini and artichoke hearts
A nice Mediterranean recipe. The vegetarian side dish contains the following ingredients: chestnut mushrooms ((250 g), halved), marinated artichoke hearts (190 g), zucchini, dried oregano, cherry tomatoes ((250 g), halved) and pine nuts (box 80 g).

Heat the grill pan. Put the mushrooms in a bowl and drizzle with 2 tbsp oil from the jar of artichoke hearts. Scoop and sprinkle with pepper and salt. Gril 4 min. Halfway.

Meanwhile, cut the courgette into slices of 1 cm. Put in a bowl and drizzle with 2 tbsp oil from the jar of artichoke hearts. Scoop and sprinkle with the oregano and possibly salt and pepper. Grill in 1 or 2 portions in 3 min. Until al dente. Turn halfway.

Halve the artichoke hearts. Mix with the tomatoes. Roast the pine nuts in a frying pan without oil or butter in 3 min. Golden brown. Shake regularly.

Scoop all vegetables together, sprinkle with the pine nuts and serve immediately.
