Directions

  1. Cook the broccoli. Boil the noodles and rinse with cold water. Mix the noodles with the sesame oil and keep separate.
  2. Mix the cooked broccoli with the rest of the vegetables, soy sauce, sunflower oil and lime juice.
  3. Bring 250 ml of water to the boil with the ginger and a pinch of salt and poach the salmon fillets for 5-8 minutes against the boil.
  4. Mix the noodles with the vegetables and spread over 4 bowls. Place the salmon on the salad and sprinkle with the peanuts and mint.
