Oriental salmon on a bed of snow peas


A tasty recipe. The main course contains the following ingredients: fish, snow peas (200 g), cucumber, fresh coriander ((15 g), only the leaves), radishes (in slices), lime (squeezed), stir-fry oil and fresh salmon fillet (benefit pack 600 g).

Directions

  1. Cook the snow peas in plenty of boiling water in 3-4 minutes.
  2. Meanwhile, halve the cucumber, scrape out the seeds and cut the halves into small cubes.
  3. Rinse the snow peas in a sieve under cold running water and let them drain well.
  4. Mix them in a bowl with the cucumber, 3/4 of the coriander, the radish, 1 tbsp lime juice, 2 tbsp oil and (freshly ground) black pepper to taste.
  5. Cut the salmon fillet in four and rub the pieces with pepper and a pinch of salt.
  6. Heat the rest of the oil in a frying pan and fry the salmon fillets over low heat for 4-6 minutes.
  7. Turn them halfway and sprinkle with the rest of the lime juice.
  8. Spoon the snow peas and the cucumber on 4 plates and put the salmon fillets on it.
  9. Pour over the baking liquid and sprinkle the dish with the rest of the coriander..
