Directions

  1. Separate the green from the bok choy and cut the white stalks of the bok choy into large pieces.
  2. Roll up the green leaves of the bok choy and cut into thin strips.
  3. Heat the oil in a large wok or stir fry pan and fry the curry paste on low heat until the curry starts to smell.
  4. Spoon the pieces of bok choy through the curry paste and fry them over a medium heat, stirring for 8-10 minutes.
  5. Stir in the greens of the paksoi for the last 2 minutes and sprinkle the dish with the cashew nuts.
  6. Delicious with pandan rice..
