Pancakes with cranberry compote
A tasty Dutch recipe. The vegetarian breakfast contains the following ingredients: sugar, cinnamon, cranberries, self-raising flour, egg (whipped), vanilla sugar, milk, sunflower oil and powdered sugar.

Bring the sugar, cinnamon and 50 ml of water in a saucepan to the boil.

Turn down the heat and add the cranberries.

Let boil gently for 7-8 minutes until they burst.

Let the cranberry compote cool down.

Stir in a smooth batter of the flour, the egg, the vanilla sugar and the milk.

Heat 1 tbsp sunflower oil in a large frying pan with non-stick coating and bake four small pancakes at once by pouring a little batter into the pan four times with a ladle.

Bake four more pancakes with the rest of the oil and batter.

Place the pancakes on a (warm) scale and sprinkle with icing sugar.

Spoon the cranberry compote or serve it separately..
