Cut the pan fillets into 8 equal pieces. Brush them with the peanut oil or sunflower oil to which the lemon juice and salt zest, salt and pepper have been added.

Put thin slices of brie and chopped chives on the table.

Fry the pan fillets on one side. Turn them over.

Put the brie on so that it melts slightly and bake the other side briefly. Sprinkle the chives.
