Roast the pine nuts in a dry frying pan until they are nicely browned.

Cut the tomatoes in quarter and remove the seeds.

Cut the buns open and cover both sides generously with Chevre Doux.

Then spread the sandwiches with the tomato, the pine nuts and the basil.

Wrap the rolls in aluminum foil and grill them in a panini grill or sandwich maker until the rolls are crispy.

Meanwhile, for the salad, mix the arugula with the dried to and make it with olive oil and some salt.

Cut the paninis in half and serve with the salad.
